– 1.5 lbs boneless, skinless chicken thighs or breasts – 1/4 cup fresh lime juice – 2 tbsp olive oil – 1/4 cup chopped fresh cilantro – 3 garlic cloves, minced – 1 tsp cumin – 1/2 tsp paprika – Salt and pepper to taste – Lime wedges (for garnish)
Ingredients
01
In a large bowl or zip bag, combine lime juice, olive oil, cilantro, garlic, cumin, paprika, salt, and pepper. Add chicken and mix well.
02
Seal and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor. The lime tenderizes while herbs infuse the meat.
03
Preheat a grill or skillet over medium-high heat. Lightly oil the surface to prevent sticking and help sear the chicken.
04
Cook marinated chicken for 5–6 minutes per side, until golden brown and the internal temperature reaches 165°F. Do not overcook.
05
Transfer chicken to a plate and let it rest for 5 minutes. This locks in juices for maximum flavor and tenderness.
06
Slice chicken into strips or serve whole. Great for tacos, burrito bowls, wraps, or over a simple bed of rice or greens.
07
Top with extra chopped cilantro and squeeze fresh lime juice over the chicken before serving to enhance the bright, citrusy flavor.
08
Pair with cilantro-lime rice, roasted veggies, corn salad, or tortillas. This recipe is versatile, healthy, and meal-prep friendly.
09
Enjoy a flavorful, protein-packed meal that’s simple to prepare and always a crowd-pleaser. Perfect for any night of the week!
