– 1 English cucumber, thinly sliced – 1 pint cherry tomatoes, halved – ½ small red onion, thinly sliced – 2 tbsp chopped fresh parsley – 1 tbsp chopped fresh mint or dill (optional) – 2 tbsp extra virgin olive oil – 1 tbsp red wine vinegar – 1 tbsp lemon juice – 1 garlic clove, minced – ½ tsp dried oregano – Salt and black pepper to taste – Optional: crumbled feta cheese

Slice cucumbers, juicy cherry tomatoes, and red onion thinly. Uniform cuts help blend the textures and look beautiful in the bowl.

Chop fresh parsley and optionally mint or dill. Herbs add bright Mediterranean flavor that complements the crisp veggies.

Whisk olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and pepper in a small bowl until well combined.

Add all veggies and herbs to a large bowl. Pour the dressing over and toss gently until evenly coated and glossy.

Let salad chill for at least 20 minutes to allow flavors to meld. Serve cold, topped with crumbled feta if desired.
