– ⅔ cup olive oil – ¾ cup granulated sugar – 2 large eggs – ½ cup milk (any kind) – 1 tsp vanilla extract – 1 tsp lemon zest – 1½ cups all-purpose flour – 1½ tsp baking powder – ¼ tsp salt – 1 cup fresh or frozen blueberries – (Optional) powdered sugar for topping

Preheat oven to 350°F and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy release.

In a bowl, whisk olive oil, sugar, eggs, milk, vanilla, and lemon zest until smooth and fully combined.

In a separate bowl, mix flour, baking powder, and salt. Slowly stir dry ingredients into wet until a thick batter forms.

Gently fold fresh or frozen blueberries into the batter. Be careful not to crush them—this keeps the cake light and pretty.

Pour batter into pan and bake 40–45 minutes, until golden and a toothpick comes out clean. Cool before slicing.
