– ⅔ cup olive oil – ¾ cup granulated sugar – 2 large eggs – ½ cup milk (any kind) – 1 tsp vanilla extract – 1 tsp lemon zest – 1½ cups all-purpose flour – 1½ tsp baking powder – ¼ tsp salt – 1 cup fresh or frozen blueberries (Optional) powdered sugar for topping

Preheat oven to 350°F and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy release.
