2 ripe avocados (firm, not mushy) ½ cup all-purpose flour 1 teaspoon salt ½ teaspoon black pepper 1 teaspoon garlic powder 2 eggs (beaten) 1 cup panko breadcrumbs Cooking spray or oil
½ cup mayonnaise 1 tablespoon Sriracha 1 teaspoon lime juice
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with oil or cooking spray.
Slice avocados into wedges. In a bowl, mix flour, salt, pepper, and garlic powder. In another bowl, beat eggs. Place panko in a third bowl.
Dredge each avocado wedge in flour, dip it into beaten eggs, then coat with panko, pressing gently to adhere for a crispy texture.
Arrange coated avocado fries on the prepared baking sheet in a single layer, ensuring they don’t touch. Spray lightly with cooking oil.
Bake for 15-20 minutes, flipping halfway, until golden brown and crispy. For extra crispiness, broil for the last 1-2 minutes.
While baking, mix mayonnaise, Sriracha, and lime juice in a small bowl. Stir well until smooth and creamy.
Remove fries from the oven and let them cool slightly. Serve immediately with the Sriracha mayo for dipping. Enjoy the crispy goodness!
