– 4 large yellow onions, thinly sliced – 3 tbsp butter – 1 tbsp olive oil – 2 cloves garlic, minced – 1/2 cup dry white wine (optional) – 6 cups beef broth – 1 tsp fresh thyme – Salt & pepper to taste – 1 baguette, sliced – 1 1/2 cups shredded Gruyère cheese

Melt butter and oil in a large pot. Add onions and cook on low, stirring often, for 30–40 minutes until deep golden brown.

Add garlic and cook 1 minute. Pour in white wine and scrape up brown bits from the pan. Simmer until wine is mostly evaporated.

Stir in beef broth, thyme, salt, and pepper. Simmer the soup uncovered for 20–30 minutes to allow flavors to deepen.

Slice the baguette and toast until crisp. This will form the base for the cheesy topping that makes this soup iconic.

Ladle soup into oven-safe bowls. Top with toasted baguette slices and a generous amount of shredded Gruyère cheese.

Place bowls under the broiler for 2–3 minutes, or until cheese is melted and bubbly with golden brown spots. Watch carefully!
