– 1 English cucumber, thinly sliced – 2 cups fresh pineapple, cubed – 2 tbsp chopped fresh cilantro – 1 tbsp chopped fresh mint – 1½ tbsp lime juice – 1 tsp olive oil – ¼ tsp chili flakes or Tajín – Salt and pepper to taste

Peel and slice the cucumbers and cube the pineapple. Uniform cuts help the flavors mix well and the salad look beautiful.

Chop fresh cilantro and mint. These add a cool, aromatic freshness that balances the sweetness of pineapple and crunch of cucumber.

Whisk lime juice, a dash of olive oil, salt, pepper, and a pinch of chili flakes or Tajín for a zesty, slightly spicy kick.

Add all sliced ingredients and herbs to a mixing bowl. Pour the dressing over and gently toss until evenly coated and vibrant.

Refrigerate for 15–20 minutes to let flavors blend. Serve cold as a light side, picnic salad, or refreshing afternoon bite.
