Crack eggs into a bowl. Add milk or water, salt, and pepper. Whisk until fully blended and slightly frothy for a tender texture.

Heat a nonstick skillet over medium-low heat. Add butter and swirl to coat. The key is low, even heat for a smooth surface.

Pour eggs into the pan and let sit for a few seconds. Use a spatula to gently stir the center, tilting the pan as needed.

As the eggs begin to set, stop stirring. Smooth the surface and gently pull edges inward to allow uncooked eggs to fill in.

Sprinkle cheese and other fillings over one side of the omelette. Don’t overfill — a little goes a long way in a perfect fold.

Gently fold the omelette in half. Let cook for 30 seconds to melt the cheese, then slide onto a plate with care.
