3/4 cup all-purpose flour 1/4 cup unsweetened cocoa powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup granulated sugar 1/4 cup brown sugar 1/2 cup buttermilk (or milk + 1/2 tsp vinegar) 1/3 cup vegetable oil 1 large egg 1 teaspoon vanilla extract 1/4 cup hot water or brewed coffee (for deeper flavor) Optional: mini chocolate chips

Preheat your oven to 350°F (175°C) and line a mini muffin pan with paper liners. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

In another bowl, mix the sugars, buttermilk, oil, egg, and vanilla extract until well combined. Gradually add the dry ingredients into the wet, stirring gently until smooth.

Add the hot water or coffee and mix until just incorporated; the batter will be thin. If desired, fold in mini chocolate chips.

Fill each mini cupcake liner about 2/3 full and bake for 10–12 minutes, or until a toothpick inserted in the center comes out clean.

Let the cupcakes cool in the pan for a few minutes before transferring to a wire rack to cool completely. Frost as desired or enjoy as-is!
